Beef, Tomato and Coriander Tagine Recipes

Ingredients:
- 450 grams minced beef
- 2 tbsp coriander (with stalks), chopped
- 1 tsp ground cumin
- A pinch of coriander
- 1 onion, chopped
- 1 clove garlic, crushed
- 1 tsp crushed dried chilli
- 1 tsp salt
- Little vegetable or olive oil for frying
- For the sauce
- 1 onion
- 2 cloves garlic
- 1 medium tin chopped
- 3 tbsp parsley, roughly chopped
- 1 tbsp parsley, roughly chopped
- 1 tbsp ground cumin
- 1 tsp ground coriander
- A pinch ground cinnamon
- 2 tbsp oil
Put all the ingredients for the meatballs in a large bowl and, using your hands give it a thorough mixing before dividing into 16 balls.
Heat oil in a frying pan and brown the kefta a few at a time. Set to one side. Finely-chop the onion and garlic and gently soften in the oil for 10-12 minutes.
Add all the other sauce ingredients and cook for 30 minutes. Place the meatballs in the sauce, cover and cook gently for a further 10 minutes.

Note:
Serve with couscous and a fresh green salad.
