Sweet and Spicy Fish Recipe

- 500 grams pomfret, whole
- 10 grams each, carrots, cabbage, spring onions julienned
- 1 tsp finely-chopped garlic
- 1 tsp red-chilli paste
- 2 - 1/2 tbsp tomato ketchup
- 1 tsp lemon juice
- 2-1/2 tbsp cornflour
- Salt, white pepper, to taste
- A pinch sugar
- 50 ml fish stock
- Refined oil, for frying and sauteeing
Clean, wash and fillet pomfret so as to have two halves. Marinate fillets with salt, pepper and sugar. Roll in cornflour and deep-fry till golden brown in colour. In a pan, heat 2 tbsp oil. Saute garlic carrots and cabbage. Add stock and bring to the boil. Add tomato ketchup, lemon juice and chilli paste. Cook till vegetables are done. Season.
Thicken with remaining cornflour and finish with spring onion. Place fillets on a plate. Pour sauce over fillets and serve hot.

Have with steamed rice.
