Crème Anglaise
(Serves 4)
Ingredients:

4 egg yolks12 fl oz milk2 tbsp sugar½ tsp vanilla
Whisk egg yolks and sugar until thick and light in color.
Heat milk and vanilla extract until almost boiling.
Very slowly add 3/2 of the milk to the egg mixture, while
whisking. Add this to the remaining milk and heat gently, stirring continuously
until it thickens.
Crème Anglaise – the perfect accompaniment to Christmas
puddings.
