(Serves 4)

Ingredients:
  • 4 egg yolks
    12 fl oz milk
    2 tbsp sugar
    ½ tsp vanilla
Method:

Whisk egg yolks and sugar until thick and light in color. Heat milk and vanilla extract until almost boiling.

Very slowly add 3/2 of the milk to the egg mixture, while whisking. Add this to the remaining milk and heat gently, stirring continuously until it thickens.

Ingredients:
  • 2 cup rice
  • 1 cup grated coconut 
  • 1/4 cup cooked rice
  • 1 tsp yeast
  • Salt, to taste
  • 1 cup water
  • 1 tsp sugar
  • 1 tbsp oil  
Method:
Soak rice for six to eight hours in water. Drain and grind along with coconut, cooked rice, salt and water. Make a smooth batter. Soak yeast in two tbsp lukewarm water with sugar. Keep for 10 minutes. When it turns frothy, add to the rice mixture, mix well and keep aside for 8-10 hours to ferment. Heat a small deep pan. Grease it and pour three tbsp of batter, twirl the pan, so that a thin lace forms on the sides of the pancake. Cover and cook for 2 to 3 minutes. Remove hopper from pan. Serve with Fish Moli Recipe.

Ingredients:
  • 1 kg pomfret
  • 4 green chillies, thinly sliced
  • 2 onions, sliced
  • 1-inch piece ginger, chopped
  • 5 cloves garlic, sliced
  • 1 tbsp vinegar
  • 3 curry leaves
  • Pinch of turmeric powder
  • 1 stick cinnamon, 4 cloves, 2 pods cardamom
  • 1 cup coconut milk
  • 2 tbsp oil 
  • Salt and pepper to taste
  • 1/2 cup water 
Method:
Clean and cut the fish into medium-sized pieces. Marinate with pepper and salt, and keep aside for two hours. Heat oil in a shallow pan and fry cloves, cinnamon and cardamom for a minute. Remove spices from oil.
Saute onion, ginger, chilli, garlic, and curry leaves in the same pan. Add turmeric and salt. Stir for 1 minute then add water. When water begins to boil, add fish, cover and cook for 5 minutes.
Now add coconut milk. Heat for a few seconds. Just before mixture begins to boil, add vinegar and remove from fire. Garnish with slices of tomatoes and cooked macaroni. Serve with Hoppers Recipe.

Duck Roast Recipe
Ingredients:
  • 1 medium-sized duck
  • 1 tsp coriander powder
  • 1 tsp pepper
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 2 cloves
  • 2 cinnamon sticks
  • 1 cup oil 
  • 1 onion, chopped
  • 2 potatoes, sliced
  • 3 onion, sliced (for frying)
  • Salt to taste  
Method:
Clean the duck. Cut into about 6 to 8 big pieces. Cook it with all the spices, chopped onion and salt. When done, remove the pieces reserving the gravy. Heat oil in a big frying pan and fry sliced onion and potatoes separately. Remove from oil. Now add the pieces of duck and fry well.
Remove the pieces and add the reserved gravy to the pan. When it simmers, add the fried duck. Mix well. Take it off the fire.
To serve, place duck in a serving dish, garnish with fried potatoes and onions.

Ingredients:
  • 500 grams beef sirloin, cubed
  • 5 cloves garlic, finely chopped
  • 2 tbsp tomato paste
  • 1 cup of water or beef both
  • 1 each, potato, carrot, green capsicum and onion, cubed
  • 100 grams pineapple, cubed
  • 2 tbsp pineapple juice
  • Salt and pepper, to taste
  • 2 tbsp oil   
Method:
In a saucepan, heat oil and saute garlic and onion. Add beef and fry till light brown. Add tomato paste and water/both.
Once it begains to boil, add the vegetables and pinapple. Now add pineapple juice and cook until beef is done.
Season with salt and pepper. 
Note: This dish from Manila goes well with white rice.

Apricot Parfait Recipe
Ingredients:
  • 3 eggs plus 4 eggs yolks
  • 150 grams sugar
  • 3 tablespoons apricot juice
  • Oil
  • Salt
  • 500 ml cream
  • 100 grams apricot jam(sieved)
  • 1 tsp vanilla sugar
Method:
Whip cream and refrigerate. In a dish, pour a generous amount of oil and cover with foil. Put eggs, egg yolks, sugar, vanilla sugar, apricot juice and a pinch of salt in a bowl, and mix together. Place over steam and beat until the mixture has a creamy consistency. Beat the mixture quickly so that lumps do not form, Remove bowl from steam and beat mixture again until it cools.
Stir in a third of the cream and mi well, then add the rest of the cream. Fill the dish with a third of the mixture. Places the jam in a piping cone and squeeze on to the mixture in stripes. Put the rest of the mixture on top, cover with foll and refrigerate, preferably overnight. Turn the parfait out of the dish and remove foil.

Note: Cut into thick slices and serve on chilled plates, decorated with chocolate flakes,apricot slices and mint.

Sweet and Spicy Fish Recipe

Ingredients:
  • 500 grams pomfret, whole
  • 10 grams each, carrots, cabbage, spring onions julienned
  • 1 tsp finely-chopped garlic
  • 1 tsp red-chilli paste
  • 2 - 1/2 tbsp tomato ketchup
  • 1 tsp lemon juice
  • 2-1/2 tbsp cornflour
  • Salt, white pepper, to taste
  • A pinch sugar
  • 50 ml fish stock
  • Refined oil, for frying and sauteeing
Method:
Clean, wash and fillet pomfret so as to have two halves. Marinate fillets with salt, pepper and sugar. Roll in cornflour and deep-fry till golden brown in colour. In a pan, heat 2 tbsp oil. Saute garlic carrots and cabbage. Add stock and bring to the boil. Add tomato ketchup, lemon juice and chilli paste. Cook till vegetables are done. Season.
Thicken with remaining cornflour and finish with spring onion. Place fillets on a plate. Pour sauce over fillets and serve hot.

Note:
Have with steamed rice.

Prawn Biryani Recipe

Ingredients:
  • 1 kg prawns
  • 1 tsp each pepper, turmeric and chilli powders
  • 2 tsp each, coriander and cumin powders
  • Salt, to taste
  • 800 grams biryani rice
  • 300 ml sunflower oil
  • 250 grams potatoes, evenly-sliced
  • 100 grams onion, chopped
  • 4 cloves garlic, chopped
  • 1/4 tsp black lemon powder
  • 400 grams fresh tomatoes, chopped
  • 1/2 tsp green chilli
  • 10 grams cinnamon sticks
Method:
Marinate prawns with 1/2 tsp each, coriander and cumin powders, and salt. Keep aside for 30 minutes. In a deep pan, heat oil and fry prawns to light brown colour. Remove.
Boil rice with salt till three-fourth done. Remove and strain. In a pan, heat five tbsp oil and saute onion, chopped green chilli and garlic till light brown in colour. Add cinnamon, pepper powder, remaining turmeric, chilli, coriander and cumin powders, and black lemon powder, and stir. Cook till the mixture does not stick to the spoon. Add tomatoes and salt, and cook for three minutes. Remove.
Layer the bottom of a vessle with potatoes. Add a layer of fried prawns followed by the gravy and then the rice. Cook covered on very low fire for 10 minutes.

Note:
Just before serving, garnish with chopped coriander leaves.

Green Masala Biryani Recipe

Ingredients:
  • 1 kg mutton, cut into pieces
  • 1 kg onions, sliced
  • 12 green chillies, ground
  • 10 cloves garlic, crushed
  • 1 big piece ginger, crushed
  • 1/2 cup oil
  • 2 tbsp ghee
  • 4 cups basmati rice, soaked in water for 10 minutes
  • 8 cups hot water
  • Salt to taste
  • 1 tsp cumin seeds
  • 2 pods cardamom
  • 2 cloves 
  • 1 stick cinnamon
Green Masala
  • 1 bunch coriander leaves
  • 2 tbsp grated coconut
  • 12 almonds
  • 2 tsp garam masala
  • 2 tbsp yoghurt
  • 1 tsp lemon
Method:
Heat oil in a heavy-based pan or pressure cooker and saute three-fourths of the onion. When onion turns glassy, add ginger, garlic and ground chilli. Stir for one minutes. Add mutton and salt. Cook for 30 minutes on a low flame. If you cook in a pressure cooker, you don't need to add water, otherwise ensure there is enough water for the mutton to cook. Meanwhile, grind all.

Note: Pappadoms and yoghurt raita make great accompaniments.
