Crispy Hake Fillets Recipe
Ingredients:
- Oil for deep-frying
- 125 grams white, bread flour
- 1 tsp salt
- 1 tbsp sunflower oil
- 2 tbsp chopped fresh parsley
- 2 large egg whites
- 800 grams hake fillets
Heat oil in a deep-frying or large saucepan so that were you to fry a cube of bread, it would brown in 40 seconds. Prepare the batter: place flour, salt and sunflower oil in a large bowl. Whisk in water to form a smooth batter. Stir in parsley.
Beat egg whites until stiff and fold gently into the batter. Dip a fish fillet into the batter and then into the hot oil. Fry until golden and crisp. Repeat with remaining fillets.
