Prawn Biryani Recipe

Ingredients:
  • 1 kg prawns
  • 1 tsp each pepper, turmeric and chilli powders
  • 2 tsp each, coriander and cumin powders
  • Salt, to taste
  • 800 grams biryani rice
  • 300 ml sunflower oil
  • 250 grams potatoes, evenly-sliced
  • 100 grams onion, chopped
  • 4 cloves garlic, chopped
  • 1/4 tsp black lemon powder
  • 400 grams fresh tomatoes, chopped
  • 1/2 tsp green chilli
  • 10 grams cinnamon sticks
Method:
Marinate prawns with 1/2 tsp each, coriander and cumin powders, and salt. Keep aside for 30 minutes. In a deep pan, heat oil and fry prawns to light brown colour. Remove.
Boil rice with salt till three-fourth done. Remove and strain. In a pan, heat five tbsp oil and saute onion, chopped green chilli and garlic till light brown in colour. Add cinnamon, pepper powder, remaining turmeric, chilli, coriander and cumin powders, and black lemon powder, and stir. Cook till the mixture does not stick to the spoon. Add tomatoes and salt, and cook for three minutes. Remove.
Layer the bottom of a vessle with potatoes. Add a layer of fried prawns followed by the gravy and then the rice. Cook covered on very low fire for 10 minutes.

Note:
Just before serving, garnish with chopped coriander leaves.

Green Masala Biryani Recipe

Ingredients:
  • 1 kg mutton, cut into pieces
  • 1 kg onions, sliced
  • 12 green chillies, ground
  • 10 cloves garlic, crushed
  • 1 big piece ginger, crushed
  • 1/2 cup oil
  • 2 tbsp ghee
  • 4 cups basmati rice, soaked in water for 10 minutes
  • 8 cups hot water
  • Salt to taste
  • 1 tsp cumin seeds
  • 2 pods cardamom
  • 2 cloves 
  • 1 stick cinnamon
Green Masala
  • 1 bunch coriander leaves
  • 2 tbsp grated coconut
  • 12 almonds
  • 2 tsp garam masala
  • 2 tbsp yoghurt
  • 1 tsp lemon
Method:
Heat oil in a heavy-based pan or pressure cooker and saute three-fourths of the onion. When onion turns glassy, add ginger, garlic and ground chilli. Stir for one minutes. Add mutton and salt. Cook for 30 minutes on a low flame. If you cook in a pressure cooker, you don't need to add water, otherwise ensure there is enough water for the mutton to cook. Meanwhile, grind all.

Note: Pappadoms and yoghurt raita make great accompaniments.

Fried Steak and Potatoes (Rice) (Lomo Saltado) Recipe
Ingredients:
  • 15 medium potatoes, peeled and cubed
  • Oil for frying potatoes
  • 50 ml oil
  • 1 onion, sliced
  • 3 cloves garlic, crushed
  • 500 grams sirloin or fillet steak, sliced
  • 1 red pepper, cubed
  • 1 chilli, chopped
  • 2 tomatoes, skinned and chopped
  • 7 ml vinegar
  • 5 ml freshly chopped origanum 
  • 15 ml freshly chopped parsley
  • Boiled rice, to serve
Method:
Deep-fry potato cubes until crisp. Place on paper towel and keep warm.
Heat 30 ml oil in a frying pan and saute onion and garlic for 30 seconds. Add meat and cook over high heat for 1-2 minutes until meat is cooked. Remove from the apan.
Add remaining oil to the pan and saute red pepper and chilli for onse minute. Add tomatoes, vinegar and herbs and return meat to the pan. Add fried potatoes to the pan and cook, stirring for 30 seconds. Season to taste, then remove from the heat and server with rice.

Note:
You can server this with rice as says above.

Ingredients:
  • 1kg medium prawns, cleaned, with tail on
  • 1 tbsp pine seeds
  • 500 grams tomatoes, peeled, deseeded and chopped
  • 3 large, green capsicums, seeded
  • 1 tsp garlic paste
  • 2 chillies, chopped
  • 1 bunch coriander, chopped
  • 2 onions, chopped
  • Salt and pepper, to taste
  • 1 cup olive oil
Method:
Heat the olive oil in a pan and fry the onion, garlic paste chillies. Then add the prawns (with tails on) and cook until half done. Then add the chopped tomatoes and cook till the prawns are fully done. Season with salt and pepper, and add the chopped coriander leaves.

Note:
Serve with saffron rice.

Ingredients:
  • 8 small veal escalopes
  • 1 bunch tarragon, chopped 
  • Oil, for frying
  • 200 grams butter
  • 2 eggs yolks
  • Salt and pepper, to taste
Method:
Heat the butter over a low flame until it is clear, then carefully pour it off into a bowl leaving the white deposit behind. Season the egg yolks and cook in a double saucepan, whisking all the time, until thick and creamy. Remove from the heat and slowly pour in the clarified butter, stirring all the time. Mix in the tarragon.
Preheat the oven grill and grease a baking sheet with a little butter. Put the escalopes between two sheets of foil and carefully beat flat. Season with salt and pepper and fry in a little oil on both sides for a total of about a minute. Remove from the pan and place on the prepared baking sheet. Cover with the tarragon sauce. Grill in the preheated oven on the top shelf until golden.
Note:
Serve with potatoes or rice.

Ingredients:
  • 750 grams cooked rice
  • 350 grams beef fillet srips
  • 2 onions, chopped
  • 250 grams prawns
  • 4 eggs
  • 1 tsp crushed dried chilli
  • 7 tbsp groundnut oil
  • 100 grams each of beef and chicken, cubed
  • 3 garlic cloves, crushed
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 125 grams cabbage, shredded
  • 2 tbsp soya sauce
  • 4 spring onions, sliced
  • 4 tbsp fried onion flakes
  • Salt, to taste
Method:
Pan-fry the beef strips until they are half done, and set aside. Fry the chopped onions and prawns separately, and set them aside. Beat the eggs. Add the chilli and salt to it and make a thin omelette. Cut it into fine strips.
Heat the oil in the wok and add the cubed chicken and beef and peas.
When it turns brown, add the garlic and then the prawns, beef strips and fried onions. Toss in the carrot, cucumber, peas and cabbage, and add the soya sauce.
Add rice, mix, and sprinkle a little water if necessary to create the necessary steam. Top it with spring onion, omelette and onion flakes.
Note:
Serve with prawn crackers, beef and chicken satay, topped with peanut sauce.

Ingredients:
  • 500 grams chicken breasts, sliced diagonally
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 cup brown rice, cooked
  • 40 grams artichokes, quartered
  • 250 grams petits pois (small green peas)
  • Grated peel of 1 lemon
  • 1 tsp dried tarragon
  • 1 tsp mustard powder
  • Seal salt and milled black pepper, to taste
Method:
Pat chicken breasts dry on paper towels. Heat butter and oil in a large frying pan. When hot, but no smoking, add onion and saute until limp, about five minutes. Add chicken pieces, a few at a time. Stir-fry for a minute or two, then turn out on to a bed of cooked rice. Continue until all chicken is cooked. Add artichokes, a little extra butter and oil to the pan and cook briefly. Add peas, lemon peel, tarragon and mustard. Season with salt and pepper, and cook until piping hot. Spoon over chicken and serve immediately.
Note:
To thaw frozen peas, rinse under cold water for a second. Place in saucepan and toss over low heat for a few seconds, allowing them to thaw in their own liquid.

Ingredients:
  • 1 cup rice
  • 2 cups yoghurt
  • 1tbsp cream
  • 1 cup fresh milk
  • 1 tsp ghee
  • 1/2 tsp mustard seeds
  • 1/4 tsp asafoetida
  • 3 cashew nuts
  • 2 green chilies, finely sliced
  • 1 tsp finely cut fresh ginger
  • Fresh coriander leaves
  • Fresh curry leaves
  • Salt, to taste
Method:
Wash and cook rice till it is soft. While is it hot, mash it with a serving spoon, cover with a lid and leave aside to cool. In a small wok, heat the ghee, splutter the mustard seeds, add asafoetida, cashew nuts, green chilies and ginger. Fry well. Add the yoghurt, cream, milk, and salt to the rice. Pour the fried contents from the wok into the rice and mix.
Garnish with finely-cut curry and coriander leaves before serving.

Note:
A cooling, delicious dish that can be ha with a dash pickle and fried pappadums. Servers 4.
