    Strawberry Cheesecake Recipe

    Strawberry Cheesecake Recipe
    Ingredients:
    • Crust
    • 200 grams chocolate digestive-biscuits, crushed
    • 4 tbsp butter, melted filling
    • 120 grams soft butter
    • 480 grams smooth cream cheese
    • 4 large eggs, separated
    • 200 grams white sugar
    • 3 tbsp cornflour
    • 1tbsp lemon juice 
    • Topping
    • 250 grams fresh strawberries, sliced
    • 200 grams sugar
    • 2 tsp lemon juice
    • 2 tsp cornflour
    Method:
    Crust: Mix crushed biscuits and butter, and press into a greased 23-cm baking tin. Bake in preheated (60C) oven for 10 minutes.
    Filling: Beat butter, cream cheese, egg yolks and sugar together until light. Beat in cornflour and lemon juice. In a separate bowl, beat egg whites until stiff. Fold into cheese mixture. Spoon into pregared tin and bake for one hour. until just set. Cool and then chill in fridge for 1-4 Hours.
    Topping: Heat strawberries, sugar and lemon juice over a low heat for 10 minutes. Mix cornflour with a little cold water. Mix a spoonful of strawberry sauce into cornflour mixture, then stir into the remaining strawberry sauce. Cool.
    Spoon sauce over cheesecake and chill until ready to serve.
    Note:
    You could top the cake with a few summer berries.
