    Beef, Tomato and Coriander Tagine Recipes
    A classic dish of Kofta (meatballs), aromatic herbs and tomatoes, slow cooked until it's full of flavour.
    Ingredients:
    • 450  grams minced beef
    • 2 tbsp coriander (with stalks), chopped
    • 1 tsp ground cumin
    • A pinch of coriander
    • 1 onion, chopped
    • 1 clove garlic, crushed
    • 1 tsp crushed dried chilli
    • 1 tsp salt
    • Little vegetable or olive oil for frying
    • For the sauce
    • 1 onion
    • 2 cloves garlic
    • 1 medium tin chopped
    • 3 tbsp parsley, roughly chopped
    • 1 tbsp parsley, roughly chopped
    • 1 tbsp ground cumin
    • 1 tsp ground coriander
    • A pinch ground cinnamon
    • 2 tbsp oil
    Method:
    Put all the ingredients for the meatballs in a large bowl and, using your hands give it a thorough mixing before dividing into 16 balls.
    Heat oil in a frying pan and brown the kefta a few at a time. Set to one side. Finely-chop the onion and garlic and gently soften in the oil for 10-12 minutes.
    Add all the other sauce ingredients and cook for 30 minutes. Place the meatballs in the sauce, cover and cook gently for a further 10 minutes.

    Note:
    Serve with couscous and a fresh green salad.
