    Green Masala Biryani Recipe

    Ingredients:
    • 1 kg mutton, cut into pieces
    • 1 kg onions, sliced
    • 12 green chillies, ground
    • 10 cloves garlic, crushed
    • 1 big piece ginger, crushed
    • 1/2 cup oil
    • 2 tbsp ghee
    • 4 cups basmati rice, soaked in water for 10 minutes
    • 8 cups hot water
    • Salt to taste
    • 1 tsp cumin seeds
    • 2 pods cardamom
    • 2 cloves 
    • 1 stick cinnamon
    Green Masala
    • 1 bunch coriander leaves
    • 2 tbsp grated coconut
    • 12 almonds
    • 2 tsp garam masala
    • 2 tbsp yoghurt
    • 1 tsp lemon
    Method:
    Heat oil in a heavy-based pan or pressure cooker and saute three-fourths of the onion. When onion turns glassy, add ginger, garlic and ground chilli. Stir for one minutes. Add mutton and salt. Cook for 30 minutes on a low flame. If you cook in a pressure cooker, you don't need to add water, otherwise ensure there is enough water for the mutton to cook. Meanwhile, grind all.

    Note: Pappadoms and yoghurt raita make great accompaniments.
