Ingredients:
- 250 grams boneless chicken, diced
- 2 tsp cornflour
- 1 tsp light soya
- 1 tsp dark soya
- 1 tbsp chopped garlic
- 1 tsp chopped ginger
- 1 tsp chopped green chilli
- 1 tsp vinegar
- 1 egg
- 1 cup chicken stock
- 1 tsp sugar
- Salt and pepper, to taste
- Oil
Marinate chicken with salt, pepper, one tbsp oil, beaten egg and one tbsp cornflour, and keep aside for about half an hour. Deep fry and drain. Heat two tbsp oil in a wok and saute ginger, garlic and chilli. Add soya sauces and stock. Heat through. Add sugar and vinegar. Mix cornflour with water add to mixture for desired consistency. Simmer for a few minutes. Remove from heat and add chicken.
Note:
Garnish with coriander.
