Ingredients:
- 250 grams garden peas
- 250 grams corn kernels
- 150 grams potatoes
- 250 grams cooking bananas
- 2 tsp butter
- 2 tsp chopped garlic
- 4 tsp chopped onion
- A pinch of salt and pepper
- 3 red chillies
- 2 litre chicken stock
- 2 tsp chopped coriander
Moil peas, corn, potatoes and bananas in chicken stock till well done. Strain and set aside.
Heat a pan with butter. Saute garlic and onion. Add the strained vegetables and saute for a few more minutes.
Oven bake the mixture to make it dry. Mash together, season to taste.
Place the Irio in the middle of a plate, and garnish with red chillies, corn kernels and coriander.
