Ingredients:
- 4 tbsp wheat
- 2 tsp olive oil
- 2 chicken breast fillets
- Handful of rockets leaves
- 2 tsp chopped parsley
- 2 tsp chopped mint
- A few cherry tomatoes, halved
- 2 tbsp roasted and chopped almonds,
- 2 tsp lemon juice
- 2 tsp olive oil
- Salt and freshly-ground black pepper, to taste
Boil wheat in salt water until soft. Drain and set aside to cool.
Heat olive oil in a frying pan and fry chicken until golden brown and cooked.
Leave to cool.
Mix wheat, rocket leaves, parsley, mint, cherry tomatoes and almonds in a mixing bowl. Cut chicken breasts into wedges and add to mixture.
In another bowl, beat lemon juice, olive oil, salt and pepper to taste, and drip over the salad. Stir through lightly.
