Carrot Halwa Recipe
Ingredients:
  • 600 grams carrot peeled and grated
  • 2 liters milk
  • 1 tbsp water
  • 3 cinnamon sticks
  • 50 grams raisins (soaked)
  • 10 cardamoms ( opened and crushed)
  • 100 grams khoya*
  • 1/2 cup butter
  • 150 grams sugar
  • 100 grams almonds, chopped
  • 1 tsp rose water
 *Available in Indian sweetmeat outlets

Method:
Place the carrots in saucepan and add the milk, water and cinnamon sticks. Bring to boil, reduce the heat, and let it simmer for about 30 minutes or until the mixture has thickened. Stir frequently. Add drained raisins, cardamom and khoya. Continue to cook until the halwa is thick.
Stir in the butter ad sugar and cook for a few more minutes until well mixed. Stir in the almonds and rose water. Transfer into a serving dish. Serve warm or cold.

Note:
Garnish with almonds flakes.
